Day 316: Blood Orange Bread

It's citrus season, yippee! I love blood oranges. I've only discovered them this past few weeks, and I'm putting them into all my dishes.

I love to make this blood orange bread. It's easy to make, and you don't need any special tools. Only a bowl, spoon/spatula, and your ingredients.

This bread itself is only made with bananas and some honey. But the glaze has powdered sugar, so it's not totally healthy. ;)

I love the bright pink hue of blood oranges. The glaze thins out as we pour it over the warm bread. This is why we have to make the glaze super thick! Don't skip out on the powdered sugar.

You can top this quick bread with candied blood oranges. It makes this bread shine!

RECIPE:

INGREDIENTS:


Quick Bread:

  • 1 1/2 cups whole wheat flour

  • 1 1/4 teaspoon baking powder

  • 1 teaspoon baking soda

  • 4 large bananas, mashed

  • 2 tablespoons honey

  • 1/3 cup butter, melted

  • 1 egg

  • 1/4 cup blood orange juice

  • 2 tablespoon blood orange zest

Glaze:

  • 1 3/4 cup powdered sugar

  • 1 tablespoon blood orange juice

STEPS:

  1. Preheat your oven to 375 degrees F and grease a bread tin with butter.

  2. Whisk your flour, baking powder, baking soda, and orange zest together in a large bowl. In a smaller bowl, combine your bananas, honey, butter, egg, and orange juice. Pour the wet into the dry and stir. Pour into the bread tin and bake for 35-40 minutes.

  3. While the bread is baking, mix the powdered sugar and orange juice to make a glaze. Drizzle onto the baked bread.
