Day 166: Cheese Tortellini

Cheese tortellini is a lot easier than it looks. It's fun to make and is a delicious lunch/dinner.

I made this tortellini using my pasta dough. This dough works for almost any pasta variation!

I also stuffed it with an easy cheese filling. It's made with ricotta and parmesan. I like to pipe out my filling, just so I have a little more control. I find that it helps me a lot!

Here I have included a video just so you can reference how to fold the tortellini.

To recap (from the video), cut circles from your dough using a cookie cutter. Run along the edges of the circle with a wet finger.


Add 1/2 teaspoon worth of filling, and fold over. Take the two ends of the half moon, and tie them together.

RECIPE:


INGREDIENTS:

  • 2 cups all-purpose flour

  • 3 eggs

  • 1 tablespoon water

  • 2 tablespoons olive oil

  • 1/4 cup ricotta

  • 2 tablespoons parmesan

STEPS:

  1. Knead flour, eggs, water, and olive oil together. Let it sit for 30 minutes.

  2. Roll into a large rectangle (thin enough to see through) and cut out circles with a cookie cutter.

  3. Take one circle and run your fingers along the edges of the circle with a wet finger. Add 1/2 a teaspoon of your filling and fold over, making a half moon. Take the two ends together, and pinch. Repeat for all circles.

  4. Boil some salted water, and add your tortellini. Cook for 5-10 minutes, and serve.
