Day 277: Gingerbread Biscotti

Hi all! Now that it's a day past the first day of winter I'm launching my new "The Bored Baker's: Cookie Box" tradition. I'll bake 12 different kinds of cookies for my cookie box. One for each day until the 24th.

Today I made my favorite cookie, biscotti. You've just gotta love the crunch of a perfectly baked biscotti. And when it's dipped in tea or coffee, it's irresistible!

Biscotti is one of the easiest cookies to bake. Why? Because if you burn it, you can always dip it in your favorite drink and it will still taste great. If you underbake it, then just bake it some longer.

I use ground ginger for this recipe, but you can also to use fresh ginger. Three tablespoons finely minced fresh ginger is the perfect amount. Stir it in when you would stir the ground ginger.

This gingerbread biscotti is full of all these wonderful spices. Not to mention, the warm spices fill your kitchen with the smell of ginger, allspice, and cinnamon. It's amazing!

RECIPE:


INGREDIENTS:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 teaspoon baking powder

  • 1 1/2 teaspoons cinnamon

  • 3/4 teaspoons allspice

  • 1 1/2 teaspoons ground ginger or 3 tablespoons freshly minced ginger

  • 2 eggs

  • 2 tablespoons molasses

  • 3 tablespoons powdered sugar

STEPS

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Mix your flour, sugar, baking powder, and spices in a large bowl. Add eggs and molasses. Knead to form a 12x3" log and dust the top with powdered sugar. Place onto the baking sheet and bake for 20 minutes.

  3. Take out and cut 1" thick biscotti slices. Arrange so they are sitting upright and bake for 30 more minutes.
