Day 83: Mini Quiche

I love these mini quiches because they are so small, and make a great snack. Also, quiche tastes amazing when it's surrounded by a thick wall of flakey pie crust. *YUM*. So, skip buying a tart shell and take out a mini muffin tin (you can also use a big muffin tin, both work).



The crust is basically just a normal pie crust. Use homemade or storebought.

For the filling all you need to do is whisk your ingredients. No mixer required!!!

You can add whatever add-ins you like. I choose mushrooms, spinach and feta cheese. If you choose others that need to cook, make sure you prep those ahead of time! 😉

You can also make a big version of these mini tarts, put them in a tart tin and bake for 30-35 minutes. You can also put these in normal size muffin tins.

RECIPE:


INGREDIENTS:

  • 1 1/4 cups all purpose flour

  • 1 1/8 teaspoons salt

  • 6 tablespoons unsalted butter

  • 1/4 cup ice water

  • 4 eggs

  • 1/2 cup whole milk

  • 1/2 cup heavy cream

  • 1/4 teaspoons salt

  • 1/4 teaspoon pepper

  • 3/4 cup add-ins (I used spinach + mushrooms)

  • 1/2 cup shredded or crumbled cheese (I used feta)

STEPS:

  1. Preheat oven to 375 degrees F and grease a mini muffin tin.

  2. In a large bowl, combine flour and salt. Cut in the butter and drizzle in the ice water. Knead together and chill for 30 minutes.

  3. Meanwhile, whisk together the eggs, milk, heavy cream, salt, and pepper. Set aside.

  4. Roll out your dough until 1/4" thick. Using a 2/5" cookie cutter cut out circles. Place them into mini muffin tins and spoon in filling. Sprinkle in add- ins and cheese. Bake for 25 minutes.
