Day 194: Rainbow Pasta

Rainbow pasta is so fun to look at and eat! Instead of using food coloring, I used vegetables to color my pasta. This way it's totally natural.

I divided my dough into fourths and colored each one with turmeric (yellow), beet (red), ube extract (purple) and spinach (green).


When you flavor your dough make sure to knead it a LOT. If you don't, you'll get a marbled appearance with your dough. The ube dough took the longest to knead

together, but in the end it looked so cool! Just make sure to wear gloves, my hands got stained purple. 🤦🏽‍♀️ Also note that your water might get purple when you cook your pasta.


If you don't have ube extract you can also use blackberry juice but make sure to strain the seeds out of the juice.


If you want to change the lightness or darkness of the color of your dough, feel free to experiment. Just keep adding flour and knead until it stops sticking.

RECIPE:


INGREDIENTS:

  • 2 cups all-purpose flour

  • 1 1/4 teaspoons salt

  • 3 eggs

  • 2 tablespoons olive oil

  • 1/3 cup beet juice (puree it and strain the clumps)

  • 1 teaspoon turmeric

  • 1/4 cup spinach puree

  • 2 1/2 teaspoons ube extract

STEPS:

  1. Mix together your flour and salt in a bowl. Make a well in the center and add in your eggs and olive oil.

  2. Divide your dough into four parts. Put each into a separate bowl and add 1 of the four colorings. Knead each ball for 5 minutes and set aside (cover it with a dish towel) for 25 minutes.

  3. Roll out your dough so it's 1/8" thick and cut 1/2" wide strips. Cook in salted water for 5-6 minutes.
