Day 119: Palak Paneer

Another one of my Indian (food) favorites: palak paneer is definitely a winner! It's packed with spinach and the paneer adds taste and texture.

No paneer? No problem, you can use tofu!

Though it doesn't give the same flavor as paneer, it'll still taste great.

Palak basically translates to spinach paneer, so the name definitely fits! :)

You can eat this with naan, paratha, roti, or rice.

RECIPE: INGREDIENTS:

  • 1 pound baby spinach, washed

  • 1 onion, chopped

  • 2 cardamom pods

  • 1 teaspoon coriander powder

  • salt to taste

  • 1 green chili

  • Juice of 1/2 a lime

  • 1 garlic, minced

  • 1" ginger, grated

  • 1/2 teaspoon chili powder

  • 1 teaspoon cumin seeds

  • 1/4 oz block paneer

  • 1/4 cup water

STEPS:

  1. Over medium heat, heat oil. Add cumin seeds and crushed cardamom. Add onions, coriander powder, salt, and saute until translucent. Stir in garlic, ginger, and fry for 1 minute. Then pour in the spinach, chili powder, and cook for 4-5 minutes.

  2. In a blender, blend spinach mixture with green chili and lime.

  3. Place back over the heat, add paneer, water and cook for 4-5 minutes
