Day 233: Tortellini Tomato Soup

This is a great lunch or dinner that can be finished in 30 minutes! It's creamy, and mouth watering good.

I recommend chopping your onions incredibly small, that way you won't get big bites of onion. If you don't want to taste your onion at all, you can blend it. But first, wait 10 minutes, so that it cools, so that your blender doesn't get too hot, and hurt your hand when opening it. Alternately, you can use an immersion blender!

I love tortellini! It's basically ravioli, but folded up, I even have a recipe for homemade tortellini, and you can make that if you want to go the extra mile.

For my tomato sauce in the soup, I don't use any tomato puree, I use store bought sauce. I like a tomato basil sauce in my soup, because it brings in some more basil. I love basil so much, it's my favorite herb.

This soup is so tasty, and I loved every bite of it. You will definitely ask for seconds! ;) It's easy, and makes a great meal. P.S. Stay tuned for tomorrow's special Halloween post!

RECIPE: INGREDIENTS:

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 medium onion, finely diced

  • 2 teaspoons Italian seasoning

  • Salt and pepper, to taste

  • 2 tablespoons all-purpose flour

  • 4 cups vegetable stock

  • 1 can tomato sauce, I use tomato basil sauce

  • 1 (9-ounce) three cheese tortellini, cooked according to package instructions

  • 1/3 cup heavy cream, milk works

STEPS:

  1. In a medium pot, heat your oil for 2 minutes. Add garlic and onions, and saute for 2 more minutes until the onions are translucent.

  2. Season with salt and pepper, and flour. Cook for 1 minute until the flour browns slightly. Pour vegetable stock and tomato sauce and simmer for 10 minutes.

  3. Then add your cream and cooked tortellini into your pot. Pour into bowls and serve.
