Day 338 Vegetable Dumplings

For these dumplings, you can use either homemade dumpling wrappers or buy storebought ones. Both will work just fine!

The filling is super simple! You don't have to do anything except mixing all the ingredients in the food processer and then cooking it!

You don't have to crimp the dumplings if you don't want to. Instead, just seal it very tightly, so nothing comes undone.

Because I'm vegetarian, I just made the filling with carrots and mushrooms, along with salt and pepper.

If you have the wrappers ready, this recipe takes just 45 minutes from start to finish. Make sure to let your dumplings cook until they have a nice golden color.

RECIPE:

INGREDIENTS:

  • 36 round dumpling wrappers

  • 1 cup mushrooms

  • 3 cups carrots, chopped into bite-sized pieces

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon ground black pepper

  • 2 cloves garlic

  • 2 slices ginger

  • 2 tablespoons soy sauce

STEPS:

  1. In a food processor, blend the mushrooms, carrots, salt, pepper, garlic, ginger, and soy sauce. Heat a pan with oil and add your filling. Cook for 5-7 minutes until the vegetables are tender. Set aside for 10 minutes.

  2. Take a wrapper and add one teaspoon worth of the filling. Run your fingers along the edge of the circle with water. Fold the wrapper in half and crimp or seal tightly. Repeat.

  3. In a large pan, heated with oil, and add in some of your dumplings. Fry on medium heat for 2-3 minutes and then pour 1/4 cup water. Increase the heat to medium-high and cover with a lid. Steam for 5-7 minutes, or until cooked.
