Week 15: Cherry Shortcake (Iowa)

Since Iowa is the leading producer of corn in the US, I made a cornmeal shortcake filled with whipped cream and roasted cherries.

Roasting cherries is easy! Place 1 cup of cherries (there should be no seed, and make sure to cut them in half), and drizzle honey over them.

You can choose the amount of honey depending on how sweet your cherries are. If they are sour, add more honey. If the cherries are already sweet, add less honey. Bake them at 375 degrees for 15 minutes.

Iowa has a cherry pie bake sale that raises money for the Vieshea Cherry Pie Scholarship Fund. So I took the cherries from the cherry pie and the cornbread shortcake from Iowa's famous corn and added them together! The final result is delicious!

INGREDIENTS:

Shortcake:

  • 1 3/4 cups all-purpose flour

  • 1/4 fine cornmeal

  • 3 Tablespoons granulated sugar

  • 2 1/2 teaspoons baking powder

  • 1 1/2 cups heavy cream

  • 1 egg

Whipped Cream:

  • 1 cup heavy cream

  • 1/4 cup powdered sugar

STEPS:

  1. In a large bowl, whisk the flour, cornmeal, sugar, and baking powder. Make a well in the center and add the heavy cream and your egg. Mix until a dough forms. Cover and chill for 10 minutes. Roll the dough out on a floured surface in the shape of a rectangle. Fold the two ends into the middle, creating a letter fold. Roll into a rectangle again, and repeat three more times. Finally, cut circles with a cookie cutter into your dough. It should be 1" thick. Place the circles onto a baking sheet covered with parchment paper. Bake at 375 degrees F for 15-18 minutes. Cool for 10 minutes.

  2. While your shortcakes are cooling, whip the heavy cream and powdered sugar until stiff peaks form with an electric mixer.

  3. To assemble, take one shortcake biscuit and add a large dollop of whipped cream. Sprinkle some cherries on top, and cover with another shortcake biscuit. Repeat for all your cherry shortcakes.
