Week 15: Cherry Shortcake (Iowa)
Since Iowa is the leading producer of corn in the US, I made a cornmeal shortcake filled with whipped cream and roasted cherries.

Roasting cherries is easy! Place 1 cup of cherries (there should be no seed, and make sure to cut them in half), and drizzle honey over them.

You can choose the amount of honey depending on how sweet your cherries are. If they are sour, add more honey. If the cherries are already sweet, add less honey. Bake them at 375 degrees for 15 minutes.

Iowa has a cherry pie bake sale that raises money for the Vieshea Cherry Pie Scholarship Fund. So I took the cherries from the cherry pie and the cornbread shortcake from Iowa's famous corn and added them together! The final result is delicious!

1/4 fine cornmeal
3 Tablespoons granulated sugar
2 1/2 teaspoons baking powder
1 1/2 cups heavy cream
