Week 6: Three Cheese and Peach Pizza

I love making homemade pizza, and with spring around, this delicious pizza topped with peaches is your perfect lunch or dinner.

Now, the flavors may seem a little odd at first, but it's a really unique recipe. I can't stop making it because fresh peaches make for the perfect pizza.

The best part? It's only 30 minutes to make. The dough is fast and doesn't need much time to proof, given that it uses instant yeast.

In the 10 minutes that you are waiting for the dough to rise, prepare all your ingredients. Then assemble, and bake. So quick!

 

RECIPE:


INGREDIENTS:

Dough:

  • 2 cups bread flour

  • 1 teaspoon granulated sugar

  • 1 packet of instant yeast

  • 1 cup water

  • 1 teaspoon salt

Toppings:

  • 2 nectarines

  • 1 tablespoon chives, chopped

  • 2 tablespoons basil, chopped

  • 1 tablespoon garlic, shredded

  • A sprinkle of red pepper flakes

  • ¾ cup shredded mozzarella cheese

  • ¼ cup crumbled blue cheese

  • Sprinkle of parmesan cheese

STEPS:

  1. In a large bowl, mix the flour, sugar, instant yeast, oil, and water. Knead it into a ball, cover it, and let it rest for 10 minutes.

  2. Now, prepare your toppings. Chop the nectarines or peaches finely so that they will cook well.

  3. Preheat your oven to 450 degrees F and dust a baking sheet with flour.

  4. Once the dough has been proofed, roll it out into a circle. Fold the edges into the inside for a crust. If you want two smaller pizzas, you can divide the dough. Place this pizza base on the prepared baking sheet.

  5. Brush olive oil onto the base of the pizza and add the chives, basil, garlic, and red pepper flakes. Sprinkle the three cheeses and top with the nectarines/peaches. Bake for 12-15 minutes, until golden brown.
