Week 46: White Chocolate Macadamia Nut Cookies

These white chocolate macadamia cookies are simply to die for! They are the perfect treat to serve for any special event coming up.

I didn't realize how well white chocolate and macadamia nuts pair together. It's like a match made in heaven.

I was also curious to learn the history behind macadamia nuts. From my understanding, it seems that macadamia nuts didn't become widely accessible around the world until around 1975.

In my opinion, the sweet white chocolate balances the salty macadamia nut perfectly. However, if you want, feel free to add chocolate chips to add a semi-bitter flavor to the cookie!




  • 1/2 cup butter

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 cup all-purpose flour

  • 1/4 teaspoon baking soda

  • 1/2 cup macadamia nuts, chopped

  • 1/2 cup white chocolate chips.


  1. Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper.

  2. In a stand mixer, cream the butter and two sugars until light and fluffy. Add in the egg and mix for 2 minutes. Then, gently fold in the flour, baking soda, macadamia nuts, and chocolate chips with a spatula. Chill for 5 minutes in the refrigerator.

  3. Once chilled, with a cookie scoop, roll out cookie dough balls and place them two inches apart on a baking sheet. Bake for 10 minutes until golden brown.
