In my opinion, the sweet white chocolate balances the salty macadamia nut perfectly. However, if you want, feel free to add chocolate chips to add a semi-bitter flavor to the cookie!
RECIPE:
INGREDIENTS:
1/2 cup butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 cup all-purpose flour
1/4 teaspoon baking soda
1/2 cup macadamia nuts, chopped
1/2 cup white chocolate chips.
STEPS:
Preheat the oven to 350 degrees F, and line a baking sheet with parchment paper.
In a stand mixer, cream the butter and two sugars until light and fluffy. Add in the egg and mix for 2 minutes. Then, gently fold in the flour, baking soda, macadamia nuts, and chocolate chips with a spatula. Chill for 5 minutes in the refrigerator.
Once chilled, with a cookie scoop, roll out cookie dough balls and place them two inches apart on a baking sheet. Bake for 10 minutes until golden brown.
