Week 118: Animal Cracker Cake Pops
Cake pops were invented fairly recently — in 2008! They are a fun treat, especially for kids, and perfect for birthdays or special gatherings.

I wanted to add a fun twist by making animal cracker cake pops. Animal crackers were my childhood, and I was feeling nostalgic.

For those who don’t know, these crackers are shortbread cookies that are shaped like various animals. You can find them at most grocery stores. Evidently, they originated from England, but later, Stauffer’s Biscuit Company, a bakery in Pennsylvania, made them more popular.

Plus, I find the colors to be so fun. The animal crackers make the cute cake pops even more enticing and delicious!
RECIPE:
INGREDIENTS:
9 oz. animal crackers, plus additional for topping if desired
4 oz. cream cheese
5 oz. white chocolate melting wafers
Lollipop sticks
Sprinkles, if desired
STEPS:
In a food processor, blend the animal crackers and cream cheese together until it forms a thick paste. Roll out 10 balls of the animal cracker mixture and set them on a plate in the refrigerator for at least 30 minutes to chill.
In a bowl, microwave the white chocolate wafers until melted. Stick your lollipop sticks into the cake pops and dip them into the white chocolate. Place extra animal crackers and sprinkles on the pop and repeat the process until finished. Set aside so that the pops firm up and then serve.
