Day 263: Bagel Casserole

This casserole makes a great brunch! It's packed with veggies, and the combination with the bagels are so good. It's the perfect amount of pudding, and tastes amazing!

I've been planning on making this for a few months now but I haven't gotten around on baking this casserole until now.

I think the bright bell peppers really compliments the bagels. It's bright and zingy so I recommend putting it in your casserole! You can add other vegetables if you want!

If you have stale bagels on hand that you want to get rid of this is a great way to use them. You can use any bagel flavor you want. I love the classic bagel, but everything bagels also taste fantastic! If you have everything bagel seasoning you can sprinkle it over the casserole!

RECIPE:


INGREDIENTS:

  • 6 cups cubed bagels

  • 1 bell pepper, chopped

  • 3/4 cup chopped tomatoes

  • 9 eggs

  • 1 and 1/3 cup milk

  • 1 cup cheddar cheese

  • A pinch of salt and pepper

  • 6 ounces cream cheese cut into bite-size pieces

  • Scallions and everything bagel seasoning, for garnish

STEPS:

  1. Toss your bagels, bell pepper, and tomato into a casserole pan.

  2. In a medium bowl combine your eggs, milk, salt/pepper, and cheese. Pour over the casserole and sprinkle the cream cheese cubes on top. Bake for about 45 minutes in an oven preheated to 375 degrees F.

  3. Serve with scallions and everything bagel seasoning!
