Day 363: Cinnamon Rolls

Ever since I had to stay at home, the one thing I've been craving is cinnamon rolls. Warm cinnamon rolls with plenty of icing. Don't skip on the icing!

It's embarrassing to admit, but I've never been able to make a successful cinnamon roll. They have always been dense and rock hard.

I'm happy to say that today, I finally made a delicious cinnamon roll. It's soft, fluffy, full of cinnamon, and slathered with cream cheese icing. Yum!

It may not be the world's healthiest breakfast, but it's so worth it. Plus, you can make everything in the night, and the next day whip up the cream cheese icing.

Simply reheat your cinnamon roll in the microwave, and enjoy! With this recipe, you'll never go back to the storebought cinnamon rolls!

  • ¼ cup granulated sugar

  • 2 eggs

  • ¼ cup unsalted butter, melted

  • 3 cups bread flour

Filling

  • 2/3 cup brown sugar

  • 1 ½ tablespoons ground cinnamon

  • 1/4 teaspoon nutmeg

  • ¼ cup unsalted butter softened

Icing

  • 4 oz cream cheese, softened

  • 2 tablespoons butter, softened

  • 3/4 cup powdered sugar

STEPS:

  1. In a large bowl, whisk the milk, yeast, and sugar. Let the mixture sit for 5 minutes, and then add the eggs, butter, and flour. Knead into a ball and cover with a dishtowel. Proof for 2 hours.

  2. Grease and line a 9" baking pan with butter and parchment paper. Roll out the dough into a 9x14" rectangle. Spread your butter all around the dough, leaving 1/2" away from the sides empty. Mix the brown sugar, cinnamon, and nutmeg in a bowl and sprinkle all around your dough. Starting from the long end, roll the dough into a log. Cut 9 slices and place them into the prepared baking sheet. Cover with a dishtowel and proof for 1 hour.

  3. Preheat your oven to 375 degrees F and bake your cinnamon rolls for 30 minutes. In a stand mixer, beat the cream cheese, butter, and powdered sugar. Spread on top of the cinnamon rolls and serve. Enjoy!
