Day 82: Baked Gnocchi

Gnocchi is not just a normal pasta shaped/crimped in a way that makes people go "woah!" It has potatoes in it! Best part: the gnocchi needs 3 ingredients plus 3 more for the toppings/sauce! Plus to crimp you JUST NEED A FORK! Hope you enjoy!




You want to mash the potatoes really well. Otherwise you will have little clumps in your dough. Also when you steam your potatoes, a quick trick is to cut them in half. This will take the process a lot less time.

If you don't want to crimp with a fork, you can just press down and make a little dent. And if you don't want to do that, you can just not crimp or press down at all.

Cook, bake, and serve!

RECIPE:


INGREDIENTS:

  • 4 medium russet potatoes

  • 1 teaspoon salt, plus more for the water

  • 1 teaspoon pepper

  • 1 egg

  • 1 ½ cups all purpose flour, extra to dust

  • 1 cup tomato sauce

  • 3 tablespoons Mozzarella

  • 2 tablespoons Parmesan.

STEPS:

  1. Preheat oven to 350 degrees F and take out a casserole pan.

  2. Boil the potatoes (keep skin on) for 20 minutes in salted water. Then peel and mash in a large bowl. Add salt, and pepper, and make a well in the center. Break an egg and mix to form a wet dough. Add all purpose flour and knead until it forms a ball. Cut into 1/4's and roll each piece into a log. Cut small squares and press down with a fork.

  3. Boil these for 30 seconds -1 minute. Layer with tomato sauce, pasta, tomato sauce, and lastly the 2 cheeses. Bake for 15 minutes covered in aluminium foil.
