Week 47: Banana and Chocolate Chip Muffins

I think this is hands down the best muffin recipe I have made on the blog. The bananas make for a perfectly sweet and caramelized muffin that you won't get enough of.

I know that four to five bananas are a lot for a muffin recipe. Trust me though, this is my secret ingredient for the recipe.

Plus, you can never go wrong with chocolate and bananas. They pair so well together. The bitter chocolate cuts through the sweetness of the bananas amazingly.

Make sure you use your ripest bananas. It seems silly, but it really makes all the difference in creating a delicious batch of muffins.

 

RECIPE:


INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1 1/4 teaspoons baking powder

  • 1/3 cup granulated sugar

  • 4-5 bananas, mashed

  • 1 egg

  • 1/3 cup butter, melted

  • 1/4 cup milk

  • 1/2 cup chocolate chips

STEPS:

  1. Preheat your oven to 375 degrees F, and line a muffin tin with cupcake liners.

  2. In a large bowl, combine all your ingredients. Avoid overmixing!

  3. With a cookie scoop, fill the muffin tin until full. Next, bake for 20 minutes.
