Week 52: Butterscotch Blondies

Today marks one year of my "Under 30 Minutes" challenge! To celebrate, I baked up this quick butterscotch blondie recipe. 

I can't believe I have been creating recipes on my blog for a little more than four years. I am so grateful for this opportunity and thankful for all of my subscribers and family who have supported me over the years. 

While I loved every minute of my "Under 30 Minutes" challenge, I believe that it's time to change gears and share other kinds of recipes. So, starting next week I am starting a new surprise challenge. 

Celebrate the end of my "Under 30 Minutes" challenge by making these butterscotch blondies below!




  • 1/2 cup butter, melted

  • 1 1/4 cup all-purpose flour

  • 1/2 teaspoon baking powder 

  • 1/4 cup granulated sugar

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 tablespoon vanilla extract

  • 1/4 cup butterscotch chips


  1. Preheat your oven to 375 degrees F, and line a baking sheet with parchment paper. 

  2. In a large bowl, combine all your ingredients. Sprinkle some extra butterscotch chips over the top of the blondies.

  3. Next, pour the batter into the prepared baking pan and bake for 20 minutes.
