Week 96: Cannoli Cake

I recently visited Boston and tried Mike’s Pastry. It specializes in cannolis, and trust me, it’s totally worth the hype.

I’ve tried two cannolis from Mike’s Pastry: the pistachio and the chocolate chip. Both were so good, but I really liked the chocolate chip flavor.

I wanted to try recreating the flavors of the cannoli in cake form, especially after seeing recipes like it on my TikTok.

With the flavors still fresh in my taste buds, I am excited to report that this cake tastes just like Mike’s Pastry’s cannoli. My family finished the cake in a day; it was just that good.

RECIPE:


INGREDIENTS:

Cake:

  • 3/4 cups butter, softened

  • 1 1/2 cups granulated sugar

  • 3 eggs

  • 2 cups all-purpose flour

  • 1 1/4 teaspoons baking powder

  • 1 cup yogurt

  • 1 cup chocolate chips

Frosting:

  • 3/4 cup ricotta cheese

  • 1 1/2 cups heavy whipping cream

  • 1 cup powdered sugar

STEPS:

  1. Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and sugar together until light and fluffy. Then, add the eggs and continue mixing. Next, add the flour and baking powder, followed by the yogurt.

  3. Gently fold in the chocolate chips and pour the batter into your prepared pan. Bake for 45 minutes and set aside to cool to room temperature.

  4. Make the frosting by whipping the ricotta until light and fluffy. Then add the whipped cream and powdered sugar and continue mixing until stiff peaks form.

  5. Spread the frosting over the cooled cake and serve.
