Day 183: Cookie Dough Cupcakes

So they're are a lot of elements to this cookie dough cupcakes, but hey - it's done in an hour. And all these key elements come together and make the best cookie dough cupcakes ever!


Hand me anther cupcake, please! Today was a great day!

This edible cookie dough. Yes! It's 100% safe to eat - no eggs and heat treated flour.


I know there are a lot of steps to make these cupcakes, but it's so worth it. I guarantee it, you have my word! It's an explosion of deliciousness in every bite.


These cupcakes are made of dreams. They're fluffy, sweet, filled with edible cookie dough, frosted with cookie dough frosting (with real cookie dough!) and topped with another edible cookie dough ball. Don't you like the sound of that!

RECIPE:


INGREDIENTS:


Cookie Dough:

  • 1/2 cup brown sugar

  • 1/8 cup granulated sugar

  • 1/2 cup butter

  • 3/4 cup all-purpose flour (heated in the microwave for 50 seconds)

  • 2 tablespoons milk

  • 1/2 cup mini chocolate chips

Cupcake:

  • 1/2 cup granulated sugar

  • 1/2 cup butter

  • 1 cup self-rising flour

  • 1/2 teaspoon baking powder

  • 2 eggs

  • 2 tablespoons milk

  • 1/2 cup chocolate chips

Cookie Dough Buttercream:

  • 1/2 cup butter

  • 1 cup powdered sugar

  • Leftover cookie dough (about 1/4 cup)

STEPS:

  1. In a stand mixer cream together both sugars and butter for 2 minutes. Add in your flour and milk. Fold in your chocolate chips and chill until further use.

  2. In the stand mixer, beat all your cupcake ingredients until smooth and creamy. Fold in your chocolate chips. With a cookie scoop, pour your cupcakes into 6-9 cupcake liners. Bake for 20 minutes at 350 degrees F.

  3. While your cupcakes are baking divide your cookie dough in half. Roll your cookie dough into 18 small balls. Save your other cookie dough for later.

  4. In your stand mixer cream the powdered sugar and butter until fluffy. Add your remaining cookie dough and pour into a piping bag. Snip off 1" from the end.

  5. Take your cupcakes make a small hole. Stuff one cookie dough ball into it. Repeat until all your cupcakes are filled with cookie dough. Pipe your cookie dough frosting and top with your remaining nine cookie dough balls.
