Day 63: Stuffed Shells

Here is an easy stuffed shells recipe that will leave you wanting for more shells than ever. Even though these shells look pretty hard to fill, they're actually super simple. You just have to get your spoon inside, and you're good to go!



Fill the filling with a spoon. Even though it looks complicated, it's really not.

In the recipe (below) I wrote "1/2 cup tomato sauce" but you can totally use 1 cup.

Prep time is only 5 minutes and the bake time is 30, so it's actually pretty easy.

Serves: 4 (12 shells)

Time: 35 -40 minutes

Tip: Make sure to get your spoon (filled with filling) inside the shells.


RECIPE:


INGREDIENTS:

  • 1/2 box of jumbo shells

  • 1 1/3 cup ricotta cheese

  • 3/4 cup parmesan cheese 1 cup mozzarella cheese

  • 1/2 cup tomato sauce

STEPS:

Preheat oven to 400 degrees F.


Cook pasta according to the box instructions. Meanwhile mix together, ricotta, 1/2 cup parmesan (leaving 1/4 extra for later) and 1/2 cup mozzarella. Fill the pasta with the cheese filling with a spoon.


Layer a casserole dish with 1/4 cup tomato sauce. Pasta, another 1/4 cup tomato sauce and finally the remaining 1/4 cup parmesan and 1/2 cup mozzarella. Bake for 30 minutes and serve.
