Week 113: Funfetti Ice Cream Cake

It’s crazy to think that I haven’t officially made an ice cream cake yet on this blog when ice cream is my favorite dessert.

I have been craving funfetti cake, but because it has been so hot, I thought it would be fun to add ice cream to the cake.

Besides, Whole Foods is having its ice cream sale of the week, so it was the perfect occasion to bake this cake.

This is the perfect showstopper cake for any birthday or summer gathering. It is fun, whimsical, and addictive.

You can substitute your ice cream flavors based on your preferences, but I wanted to add strawberry to give a pop of pink to the cake. It’s your choice!
RECIPE:
INGREDIENTS:
Cake:
3 eggs
3/4 cup granulated sugar
3/4 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 cup milk
Ice Cream:
16 oz. vanilla ice cream
16 oz. strawberry ice cream
Frosting:
2 cups heavy whipping cream
1 cup powdered sugar
STEPS:
Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.
In a bowl, mix together all the cake ingredients and pour into your prepared cake pan. Bake for 35 minutes and set aside to cool to room temperature.
Line the same cake pan with plastic wrap instead. Add a layer of vanilla ice cream and chill for 10 minutes in the freezer. Then, add a second layer of the strawberry ice cream and top with the cooled cake layer. Allow the cake to chill in the freezer for 10 hours.
After 10 hours, make the frosting. In the bowl of a stand mixer, beat the heavy whipping cream and powdered sugar until stiff peaks form. Spread the frosting over the cake and decorate as desired. Chill in the freezer for another two hours and serve.
