Day 196: Homemade Tapioca Pearls + Milk Tea Recipe

Tapioca pearls are little balls made out of tapioca flour, brown sugar, and water.


They can be added to milk tea, smoothies, really anything. Here in this recipe I've attached a recipe for my milk tea.


If you don't have time to roll the tapioca pearls you can simply cut them into squares. They will still taste the same!


I've always loved bubble tea. It's so delicious, and the best part - the tapioca pearls. It adds great texture to the drink and something to chew on.


Right after I started the blog I attempted to make this drink but with store bought tapioca pearls. They didn't work out, and ever since then I've been craving for some bubble tea. It's really one of my favorite drinks!

RECIPE:


INGREDIENTS:

  • 3/4 cup tapioca flour

  • 7 tablespoons brown sugar

  • 1/4 cup water

Milk Tea:

  • 1 cup water

  • 2 teaspoons black tea leaves (3 bags also work)

  • 1 cup milk

  • 3 tablespoons heavy whipping cream

STEPS:

  1. Over medium heat dissolve 5 tablespoons of brown sugar with your water. Do this until it starts boiling. Add in 1/3 cup of your flour and mix until it forms a gooey paste.

  2. Add in your remaining flour and knead into a ball. Roll into thin strips and cut tiny (1/4" wide) squares. Roll these into balls and dust with tapioca flour to avoid the ball sticking to each other.

  3. Add enough water so it's 10 times the amount of tapioca pearls. Make sure it's boiling! Add your tapioca pearls and cook on medium heat for 15 minutes. Turn off heat and cover with a lid for another 15 minutes.

  4. Meanwhile on a pot cook your tea and water for 5 minutes over medium high. Add in milk and set aside.

  5. Pour your tapioca pearls and add your remaining two tablespoons brown sugar. Add this to a cup and pour in your milk tea.
