Week 12: Ice Cream Baked Potato (Idaho)

As Idaho is famous for potatoes (there is even a hotel that's shaped like a giant potato), I knew I had to make a sweet version of their favorite vegetable!

Yes, the photo above is not your average savory baked potato, but an ice cream-filled potato loaded with sugar. :)


If you don't like vanilla ice cream, feel free to use any other flavor. However, note that it won't look exactly like a baked potato on the inside if you have an ice cream flavor such as strawberry or chocolate.

To decorate my ice cream baked potato, I used chopped-up red licorice pieces as my bacon and coconut (that I colored yellow) for the cheese.

RECIPE:


INGREDIENTS:

  • 1-pint vanilla ice cream

  • Cocoa powder, as needed

  • Whipped cream, as needed

  • Shredded coconut, as needed

  • Yellow food coloring, as needed

  • Green food coloring, as needed

  • Red licorice, as needed

STEPS:

  1. Place a sheet of plastic wrap on a clean surface. Add your pint of ice cream, and shape it into a potato shape. Note: I made divided the ice cream in half to make two ice cream baked potatoes!

  2. Roll up the plastic wrap and place the ice cream potato into the refrigerator. Chill for 1 hour.

  3. In a small bowl, mix yellow food coloring with the coconut.

  4. In a separate bowl, add the green food coloring with additional coconut. Chop the red licorice into small pieces. Set aside your cocoa powder in a bowl.

  5. Take your ice cream potato out and dip it in cocoa powder. Cut a small slit in the middle and fill it with whipped cream. Sprinkle the yellow coconut (this is your cheese), green coconut (this is your chives), and red licorice onto the whipped cream. Serve!
