Day 333: M&M Cookies

M&M cookies are bright and colorful. Perfect for today's big game! These are thick, chewy, and perfectly crisp on the outside.

Use any kind of M&M you want. I like the caramel-filled M&M's, but all the flavors will also work.

You can add as many M&M's as you wish, but make sure to reserve some for the top. If you stick some extra M&M's on the top of each cookie just before you put it in the oven, it will look great!

Make sure not to overmix your cookie dough. As soon as the dough forms a ball in the mixer, fold in the M&M's.

What I love about this recipe is that you don't have to chill the cookies at all! They are very easy to make. You can have a batch ready to be eaten in less than 45 minutes!

RECIPE:


INGREDIENTS:

  • 1/2 cup butter, softened

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 egg

  • 2 teaspoons vanilla extract

  • 1 1/4 cup bread flour, or all-purpose flour

  • 1 teaspoon baking soda

  • 3/4 cup M&M's, reserve some extra for the top

  • 1 1/2 teaspoons coarse salt, for sprinkling

STEPS:

  1. Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.

  2. With an electric mixer cream the butter and two sugars for two minutes until fluffy. Pour in the egg and vanilla extract. Add flour and baking soda and mix for two minutes. The cookie dough will form a ball if you wait long enough. Fold in your M&M's.

  3. With an ice cream scoop, drop the cookie dough onto the prepared baking sheet. Roll the cookies into balls and place 3" away from each other. Flatten slightly and sprinkle the coarse salt. Bake for 12-15 minutes or until the bottom is golden brown. Cool for 5 minutes.
