Mississippi mud pies can have different fillings and toppings. Usually, there is a chocolate crust, a chocolate filling, and either whipped cream, ice cream, or meringue for the final topping.
I chose to do a chocolate Oreo crust with an extra fudgy brownie filling. Then I did a simple chocolate pudding to put on top of the brownie layer with some whipped cream to balance the chocolate flavor. I also found some chocolate syrup in the refrigerator, and so I knew I had to do a chocolate drizzle on top of the whipped cream.
I finished my mud pie off with some chocolate shavings. No, it's not the healthiest dessert, but it will definitely satisfy your sweet tooth. It's so good!

INGREDIENTS:
Crust:
1 cup crushed Oreos
1/4 cup melted butter
Brownie Layer:
1/2 cup butter
1 cup chocolate chips
1/2 cup brown sugar
1/2 cup granulated sugar
4 eggs
1/4 cup water
Chocolate Pudding Layer:
1/4 cup flour or cornstarch
1/2 cup granulated sugar
1/4 cup cocoa powder
1/4 cup chocolate chips
3 cups milk
Whipped Cream:
1 cup heavy whipping cream
1/4 cup powdered sugar
Toppings:
Chocolate Syrup (Optional)
Chocolate shavings (Optional)
STEPS:
Preheat your oven to 350 degrees F. In a food processor, blend the Oreos and melted butter together to form a crust. Press into a 9" springform pan and bake for 10 minutes. Cool your crust while you make your brownie layer, but don't turn the oven off!
In a small bowl, melt the butter and chocolate in 30-second intervals. Add in the two sugars and eggs. Fold in the cocoa powder and pour into your Oreo crust. Bake for 30 minutes and cool completely.
Whisk your sugar, flour, cocoa powder, chocolate, and milk over medium heat in a large pot. Add your eggs and keep whisking to avoid scrambling your eggs! Add your butter and pour into a pie pan. Chill for 30 minutes. Spoon your chilled pudding onto your cooled brownie and place your mud pie into your refrigerator. Chill for 3 hours.
While your pie is chilling, whip your whipped cream and powdered sugar until stiff peaks form. Dollop onto your mud pie and drizzle some chocolate syrup. If you want, you can also add chocolate shavings.
