Week 128: Mokkapalat
Mokkapalat is a chocolate sheet cake topped with a delicious mocha frosting from Finland.

The recipe was first published in Sju sorters kakor, a Swedish cookbook, in 1945. It was later translated into Finnish.

Although the original recipe called for chocolate, the Finnish translations replaced the chocolate with cocoa as it was cheaper.

In Finnish Mokkapalt means a piece of suede. The treat gained popularity in the 1980s and was commonly served at parties and celebrations.
RECIPE:
INGREDIENTS:
Cake:
1 cup butter, softened
1 1/4 cups granulated sugar
3 eggs
1 1/2 cups milk
2 1/2 cups all-purpose flour
1 teaspoon baking powder
4 tablespoons cocoa powder
Icing:
1 stick butter, softened
1/3 cup cocoa powder
3/4 cup coffee
3 1/2 cups powdered sugar
Sprinkles
STEPS:
Preheat your oven to 400 degrees F and line a 9x9-inch cake pan with parchment paper.
In the bowl of a stand mixer, beat the butter and sugar until light and fluffy. Add the eggs, followed by the flour, cocoa powder, baking powder, and milk.
Pour the batter into your prepared pan and bake for 25 minutes. Set aside to cool.
While the cake cools, make the icing. Melt the butter, and add the cocoa powder, coffee, and powdered sugar.
Spread the icing over the cake and decorate with sprinkles.
