Week 99: Molten Lava Cake

I’ve always struggled to make the perfect lava cake that oozes out in the middle. That’s why, in the past, I’ve gravitated to my deep-dish lava cake recipe.

However, I think it’s so fun to be served your own individual lava cake. So, I set off on a mission to bake the best molten lava cake.

My favorite chocolate cake is from a place called Hot Cakes in downtown Seattle. I always eat mine with a scoop of vanilla ice cream, and it’s chef's kiss.

But Hot Cake’s is a little far from me, so I knew I had to perfect my own lava cake recipe. I recommend serving your lava cakes with either a dash of powdered sugar or a big scoop of ice cream.

RECIPE:


INGREDIENTS:

  • 1/2 cup butter

  • 8 oz chocolate

  • 2 eggs

  • 2 egg yolks

  • 1/3 cup granulated sugar

  • 2 tablespoons all-purpose flour

STEPS:

  1. Preheat your oven to 425 degrees F, and grease three ramekins with butter. Dust them lightly with cocoa powder as well.

  2. In a bowl over a double boiler, melt the butter and chocolate. Set aside.

  3. In the bowl of a stand mixer, beat the sugar and eggs until light and fluffy. Add the chocolate, butter, and flour. Fold to combine and divide evenly between the three ramekins. Bake for 7 minutes.

  4. Allow the cakes to cool for one minute, then invert each onto a plate. Wait a few seconds before lifting the ramekin up to avoid any cracks.
