Day 230: Nutella Sugar Cookies

It's day 230, yippee! I've got 20 days until 250 days of baking. And guess what else is coming right around the corner? Halloween! I love Halloween, and today I'm pre-celebrating with these nutella sugar cookies shaped as bats.

What are your plans for Halloween because of Covid? I'm probably just going to be bake something special and share it with all of you on this blog! I can't believe I've only done two Halloween themed desserts, this counting as one. The clock is ticking fast, and I've got a lot planned for you all, so stay tuned for that.

This is actually my first time decorating sugar cookies with royal icing, so the process was definitely new for me! I made some other Halloween themed cookies but loved my bats the best though, and thought they were the cutest.


Now, there have been some confusion about these sugar cookies. Most recipes want to stuff nutella in the cookies, and make it a drop cookie. A drop cookie is a kind of cookie where you take an ice cream scoop, and drop it onto your parchment paper.


A sugar cookie is when you roll the cookie dough out, and cut shapes using cookie cutters! This, however, is a classic sugar cookie with nutella in the dough itself. I loved my bat nutella sugar cookies!

RECIPE:


INGREDIENTS:

  • 2 1/4 cups all-purpose flour

  • 1 tablespoon cornstarch

  • 1/2 cup butter

  • 1 egg

  • 1/2 cup granulated sugar

  • 3/4 cups nutella

  • Royal Icing

STEPS

  1. Whisk the flour and cornstarch together in a bowl. In a stand mixer cream your butter and sugar together. Slowly add in your egg and nutella. Mix in your flour mixture and wrap in plastic wrap. Chill for 1-2 hours.

  2. Preheat your oven to 375 degrees F and line a baking sheet with parchment paper. Next you're going to roll your dough out. It should be 1/2" thick. Cut out shapes and bake for 12 minutes.

  3. Cool and decorate with royal icing and sprinkles!
