Week 121: Raspberry Lamington Cake

Lamingtons are a type of cake that originates from Australia. They are typically small mini cakes dipped in chocolate and coconut.

Many locals claim that lamingtons were made by accident by a nervous maid. However, the origins of lamingtons are certainly disputed and are based on rumors.

However, they are still considered the “national dessert” by locals in Australia and are very popular in bakeries and shops.

Typically, lamingtons are coated with chocolate and filled with jam, but I wanted to make the dessert more summery. So I made a raspberry glaze to decorate the cake instead.
RECIPE:
INGREDIENTS:
Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
6 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
Glaze:
1/4 cup milk
2 1/2 cups powdered sugar
1/4 cup raspberry preserves
2 cups dessicated coconut
Filling:
1 1/2 cups heavy whipping cream
1/4 cup mascarpone cheese
1 1/2 cups powdered sugar
1/2 cup raspberry preserves
STEPS:
Preheat your oven to 350 degrees and grease 2 8-inch cake pans with butter.
In the bowl of a stand mixer, beat the butter and sugar until light and fluffy. Add in the eggs and vanilla extract, followed by flour and baking powder. Divide the batter between the two pans and bake for 40 minutes. Allow the cake to cool to room temperature.
In a bowl, whisk the milk, powdered sugar, and raspberry preserves to form a glaze. With a spatula, spread the glaze over the tops and sides of each cake layer. Cover with desiccated coconut and chill in the refrigerator while you make the filling.
In the bowl of a stand mixer, beat the heavy whipping cream, mascarpone cheese, and powdered sugar until stiff peaks form.
Take a cake layer and place it so that the glazed layer is on the bottom of the plate. Spread the raspberry preserves for the filling over this cake layer. Then, pipe or spread your whipped frosting over the preserves, and top with the other cake layer.
