Week 105: Reese's Pieces Peanut Butter Cookie Cake

This recipe is for all the peanut butter chocolate chip cookie lovers out there, or maybe even just peanut butter fans in general.

To be honest, I am not a big fan of peanut butter. And honestly, it wasn’t always this way. When I was little, I loved peanut butter; I would eat it on apples and on pancakes.

However, I grew up eating a peanut butter and jelly sandwich throughout elementary school, and that is when I started to dislike peanut butter. I just had wayyy too much of it.

Today, I decided to take a risk and make a Reese’s Pieces-inspired chocolate chip cookie cake, and it turned out so good. I don’t know if I can ever eat a peanut butter and jelly sandwich again, but I will definitely get seconds for this cake!

RECIPE:


INGREDIENTS:

  • 3/4 cup butter, softened

  • 1 1/4 cups brown sugar

  • 2 eggs

  • 1/4 cup peanut butter

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 cup Reese’s Pieces, chopped

  • Chocolate buttercream, if desired

STEPS:

  1. Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.

  2. In the bowl of your stand mixer, beat the butter and sugar until light and fluffy. Add the eggs and peanut butter. Then add the flour and baking soda.

  3. Fold in the chopped Reese’s Pieces and press your dough onto the cake pan. Bake for 25 minutes and serve with frosting, if desired.
