Day 181: Strawberry Scones

I love these strawberry scones. They're fluffy, crispy and filled with juicy strawberries.

I know strawberry season is done, but I just had to share with you this amazing strawberry scone recipe.


And the sweet vanilla glaze? It's just the perfect pair. Don't skip on the glaze. The scones themselves aren't very sweet, so you need the glaze. They work so well together.


I always noticed that I was getting clumps in my glaze, but I found that if you sift together the powdered sugar that won't happen. 🤦🏽‍♀️


If you forget (like I do) just strain your mixture through a fine mesh sieve.

Let's talk about the strawberries:

  1. Make sure you really really really dry them well. Otherwise your scones will get very soggy.

  2. Cut your strawberries into 1-2" chunks.

  3. Pick your sweetest strawberries, it really matters!


These scones are great for breakfast, and they're done (and eaten) pretty fast! Hope you have fun making them!

RECIPE:


INGREDIENTS:

  • 2 cups all purpose flour

  • 1 tablespoons baking powder

  • 1/4 cup granulated sugar

  • 6 tablespoons butter, cut into chunks

  • 1 cup heavy whipping cream

  • 1/3 cup fresh strawberries, cut into chunks

  • 1 1/2 cups powdered sugar

  • 1 tablespoon milk

STEPS:

  1. Preheat your oven to 400 degrees F. In a food processor pulse your flour, baking powder, sugar and butter until the butter are the size of small peas.

  2. Put this mixture into a bowl and add heavy whipping cream. With a spoon mix it until it forms a rough dough. Add in your strawberry chunks and knead your dough into a large disk (it should be 1" tall). Cut 8 triangles and bake for 25 minutes.

  3. Meanwhile mix together powdered sugar and milk. Pour your glaze (in a zigzag motion) over your warm scones.
