Week 102: Ube Tiramisu

I saw this ube tiramisu on my TikTok recently, and I got inspired to recreate it! It’s an easy-to-make variation of the classic tiramisu.

I feel like I’ve been finding all of my recipes through social media these days, because I’ve been trying to branch out beyond the average funfetti or chocolate cake.

I want to try new recipes from around the world, and I love how this cake is a fusion between Italian and Filipino cuisine!

Ube is a kind of sweet yam and has an earthy vanilla taste. Additionally, it imparts a natural purple hue to the cake, making it look particularly attractive when served.

RECIPE:


INGREDIENTS:

Ube Filling:

  • 1/2 cup mascarpone cheese

  • 1 cup heavy whipping cream

  • 1 cup powdered sugar

  • 1/2 teaspoon ube extract

Ube soak:

  • 1/4 cup condensed milk

  • 2 1/2 cups whole milk

  • 1/2 teaspoon ube extract

  • 10 oz. of lady fingers

Frosting for the top:

  • 1/2 cup heavy whipping cream

  • 1/2 cup powdered sugar

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon ube extract, optional

STEPS:

  1. In a bowl, beat the mascarpone, heavy whipping cream, powdered sugar, and ube extract until stiff peaks form. Set aside.

  2. In another bowl, beat heavy whipping cream,  powdered sugar, and vanilla extract until stiff peaks form. This will be the frosting for the very top. I added a drop of ube extract and spirilied it, but that step is optional.

  3. In a shallow bowl, mix the milk, condensed milk, and ube extract. Dip the ladyfingers into this mixture and set a layer of them in a serving pan. Add a layer of the mascarpone cream, followed by another layer of ladyfingers.

  4. Spread a layer of the vanilla frosting over the tiramisu and serve.
