Week 17: Mango Sticky Rice Chia Pudding

There is nothing better than a delicious serving of mango sticky rice on a warm summer day.

Mango sticky rice does take a very long time to make, so I knew there must be an easier way to eat one of my favorite desserts!

I decided to use chia seeds as a substitute for the rice, and it tasted so good. 100% recommend for your next breakfast.

Plus, it is so fast and easy. Just mix together the chia seeds and coconut milk, chill in the refrigerator, and top with mangoes and condensed milk.

 

RECIPE:


INGREDIENTS:

  • 4 tablespoons chia seeds

  • 1 can coconut milk

  • 2 mangoes, chopped

  • Drizzle of condensed milk

STEPS:

  1. In a large bowl, mix the chia seeds and coconut milk together. Refrigerate for 30 minutes.

  2. Divide the mixture into bowls and top with mangoes and condensed milk.
