Week 23: Creamy Vegetable Sandwich

I first made this delicious sandwich (I'm still not quite sure what to call it) during my 365 days of baking, but never posted it until now!

I honestly don't know why I didn't share it with all of you because it always tastes so good whenever I make it.

It's a very simple recipe, and surprisingly, the vegetables add so much flavor and elevate the sandwich.

The first time I tried out this recipe, I actually made it in a pizza form. However, I found it faster and easier to make as a sandwich.

 

RECIPE:


INGREDIENTS:

Sauce:

  • 1 tablespoon butter

  • 2 tablespoons flour

  • 1/2 cup whole milk

Vegetables:

  • 1/4 cup red pepper, diced

  • 1/4 cup zucchini, diced

  • 1/4 cup onions, diced

  • 4 slices of French bread, to assemble

STEPS:

  1. In a greased pan, sauté the onions, pepper, and zucchini over medium-high heat for 5 minutes.

  2. In a separate pot over medium-high heat, stir the butter and flour together. Then, slowly incorporate the milk and continue mixing until the sauce thickens.

  3. Spread the sauce over one slice of bread and add the vegetables. Top with the other slice, and grill it on both sides until golden brown. This should take 1-2 minutes over medium heat.
