Week 27: Pumpkin Scones

Scones are one of my favorite things to bake, and these scones are no exception!

They are the definition of fall for me, and they never fail to taste absolutely delicious. I love scones because they can be totally customizable depending on what you are craving.

All you have to do is throw in your favorite fillings like blueberries or pumpkin, and you have the ultimate breakfast ready to go!

The glaze is optional for this recipe, but I recommend adding it because it elevates the fall flavor so much more!

 

RECIPE:


INGREDIENTS:

Scones:

  • 1 1/2 cups all-purpose flour

  • 1/4 cup brown sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 teaspoon ground pumpkin pie spice

  • 1/4 cup butter, cubed and chilled

  • 1/4 cup canned pumpkin puree

  • 2 tablespoons whole milk

  • 1 egg

Glaze:

  • 1/2 cup powdered sugar

  • 2 teaspoons milk

  • 1/2 teaspoon ground pumpkin pie spice

STEPS:

  1. Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.

  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, and pumpkin pie spice. Cut in the butter, and add the pumpkin, milk, and egg. Mix and then form it into a disc. Cut the disk in half, and from there, make 6 slices.

  3. Place each slice on the prepared baking sheet and bake for 15-17 minutes.
