Week 28: Banana Maple Muffins

These banana maple muffins are the perfect one-bowl snack that is perfect for any time when you are on the go!

I think the combination of maple and banana just screams fall! The flavors make for a decadent muffin that is so simple to make.

The older the bananas you have are, the better. They will be sweeter, and the banana flavor in the muffins will be more apparent.

If you want, you can even make this recipe in the form of a quick bread. Pour the batter into a bread pan and increase the cooking time to 45 minutes.

 

RECIPE:


INGREDIENTS:

  • 4 mashed bananas

  • 1/4 cup maple syrup

  • 1/4 cup vegetable oil

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon ground cinnamon

STEPS:

  1. Preheat your oven to 350 and line a muffin tin with cupcake liners.

  2. In a large bowl, combine all your ingredients.

  3. With a cookie scoop, divide the batter evenly into the muffin liners.

  4. Bake for 25 minutes and serve!
