Week 67: Chocolate Loaf Cake

A chocolate loaf is perfect for a sweeter breakfast or even an afternoon snack.

It's incredibly simple to make this chocolate loaf cake, as it requires only five ingredients and can be prepared in just 30 minutes.

Plus, it's a one-bowl recipe. You don't need to use a stand mixer unless you want to top the cake with frosting.

If you're not a fan of chocolate frosting, you can top the cake off with chocolate chips or just serve it by itself.

RECIPE:


INGREDIENTS:

Cake:

  • 1 cup all-purpose flour

  • 1 1/4 cups granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 egg

  • 1/2 cup Greek yogurt

  • 1/3 cup olive oil

  • 1/2 cup hot water

Frosting:

  • 1/2 cup unsalted butter, softened

  • 1/2 cup cocoa powder

  • 1/3 cup powdered sugar

STEPS:

  1. Preheat your oven to 350 degrees F, and grease a loaf pan with butter.

  2. In a large bowl, whisk to combine all the cake ingredients. Pour the batter into the loaf pan and bake for 30 minutes.

  3. Set the cake aside to cool to room temperature.

  4. If desired, make the frosting by beating the butter, powdered sugar, and cocoa powder until light and fluffy with an electric mixer. Frost the top of the cake and serve.
