Day 165: Baked Rabri Boondi Ladoo Gulab Jamun

What is rabri? What is boondi ladoo? And what is gulab jamun? Don't worry, these are all suitable questions.


  1. Rabri is a milk dessert

  2. Boondi Ladoo is a fried chickpea granules soaked in sugar syrup

  3. Gulab Jamun is a fried sweet that's made out of milk solids, rose water, cardamom, and sugar.

Even though all three sweets seem pretty hard to make - don't worry. You can easily find boondi ladoos and gulab jamun at Indian grocery stores.

You will have to make the rabri, but it's super easy! Rabri comes together in 30 minutes max, and only needs:

Milk

Cardamom

Condensed Milk

Breadcrumbs

Making the breadcrumbs are super easy. Don't use store bought breadcrumbs, because they're cooked. Instead take some white bread (take off the crusts) and pulse it in a blender for a few seconds.

When you add them together, it tastes amazing. It's so rich and sweet, with all these delicious textures. This is one of my dad's favorite recipes from his childhood.

RECIPE:


INGREDIENTS:

  • 2 cups whole milk

  • 1/4 teaspoon cardamom

  • 1 cup breadcrumbs (see notes above)

  • 1 - 1 1/2 cups condensed milk

  • 3 gulab jamuns, cut in half

  • 5 mini boondi ladoos, cut in half

  • Chopped nuts, saffron, etc.

STEPS:

  1. Over medium heat boil milk. Add cardamom and cook for three minutes. Stir in breadcrumbs and condensed milk, cook for another 5-7 minutes. Pour into a casserole pan (or pie tin) and chill for 2 hours.

  2. Preheat oven 375 degrees F.

  3. Take out of the fridge and arrange your gulab jamuns and boondi ladoos in any way you want. Sprinkle with chopped nuts and saffron, bake for 10 minutes.
