Day 137: Banana Apple Muffins

Banana muffins are great because they're small and a great breakfast. But why not add some apples to the mix?

For years my mom has been making banana muffins, and the smell that comes out the oven door is spectacular.


One day I had extra apples lying next to me so I added those in; they were amazing!


This is a one-bowl recipe, and it's incredibly hard to mess this recipe up. It's very forgiving.


Light in sugar, packed with bananas, apples, and a hint of cinnamon you will devour it all!

RECIPE:


INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1/4 cup sugar

  • 1/2 cup butter, melted

  • 2 eggs

  • 1 teaspoon baking soda

  • 4 bananas, mashed

  • 1 apple, grated

  • 1/2 teaspoon cinnamon

STEPS:

  1. Preheat oven 350 degrees F, and grease a muffin tin.

  2. Add all of the ingredients together and with a cookie scoop, pour the batter into the arranged muffin tins.

  3. Bake for 20 minutes.
