Day 238: Banana French Toast

This banana bread is certainly a sweet treat! When the toast cooks, it sort of caramelizes, and tastes amazing paired with the banana bread.

We had a lot of bananas on hand and so I decided to make this banana French toast recipe today!


This may look kind of complicated, but it's actually super simple. First start with some banana bread. If you've made a batch a few days ago and it's going stale, French toast is a great way to use up old bread.

If you don't have day old banana bread on hand, fresh bread is totally okay. You can make your bread the day before and this recipe will be even easier.

The French toast part only takes 5 minutes, so I'm not kidding by fast! And if you want to skip making the banana bread, that's cool as well. Just buy some ready-made banana bread, and start making this French toast.

Make sure to serve this French toast with plenty of maple syrup, whipped cream, and obviously, bananas.

RECIPE:


INGREDIENTS:

  • Banana Bread Recipe:

  • 1/4 cup butter

  • 1/4 cup sugar

  • 2 bananas

  • 1 egg

  • 3/4 cup flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

French Toast:

  • 2 eggs

  • 1 tablespoon milk

  • 1/4 teaspoon cinnamon

  • 6-8 slices of banana bread above

STEPS:

  1. Cream your butter and sugar together in an electric mixer. Beat your mashed bananas and egg in and sift in the flour, baking soda, and cinnamon. Pour batter into a greased loaf pan and bake for 45 minutes.

  2. Spread some oil around your pan and heat on high. Let the pan heat up while you assemble your French toast.

  3. In a small bowl stir your eggs, milk, and cinnamon together. Dip your bread slices into the egg mixture on both sides. Place onto pan and cook on each side for 45 seconds over medium heat.
