These blueberry scones are a perfect way to begin your day at breakfast! You can also opt out for the sugar in this recipe! I added some brown sugar on top to give these scones a crunchy note.
The dough will be sticky, add more flour at the end, if needed.
If you like giant scones only make one disk (it makes 6). If you do like small, compact, scones make two disks and you can get 12. Yeah, I went for the big scones.
I added brown sugar on the top, because it will really give a good crackle.
Serve this at breakfast, tea, or even dessert! 😏
Serves: 6/12 (read post details above)
Time: 45 mins
2 cups all purpose flour
1/4 cup sugar, optional
2 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons cold butter, cut up
1/2 cup whole milk
1 large egg, lightly beaten
6 ounces blueberries, rinsed and dried
3 tablespoons brown sugar
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
In a food processor, combine flour, sugar, baking powder, salt, and cubed butter. Slowly add the milk, egg and blueberries. Flatten into 2 disks and cut 6 triangles out of each. Sprinkle brown sugar over each scone. Bake for 20 minutes.
