Day 167: Carrot Waffles

It's a day after national Waffle Day! Oops, I can't believe I missed it! Better late than never, no?

Carrots for breakfast? I know, it seems kind of weird, but these waffles do taste amazing.

In fact you can taste the carrots but not taste them in a "healthy" way if you know what I mean.

Basically they add tons of moisture, and a kind of sweet taste. These waffles really are the best.

Serve these with a tangy cream cheese icing:

  1. 2 oz cream cheese, microwaved for 10 seconds

  2. 1/3 cup powdered sugar

  3. 1 1/2 tablespoons whole milk

STEPS:

  • Mix together.

You can also just use maple syrup, as seen in the video below.

RECIPE:


INGREDIENTS:

  • 2 eggs

  • 1/3 cup yogurt

  • 1/2 cup milk

  • 1 1/2 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 1/2 teaspoons cinnamon

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon ginger

  • 1/2 teaspoon baking soda

  • 1 cup shredded carrots

STEPS:

  1. Whisk together the eggs, yogurt, and milk. Add in you dry ingredients and carrots. Mix until well combined.

  2. Heat your waffle maker (spoon in batter) and cook according to the waffle maker's instructions.
