Week 77: Chai Latte Sheet Cake

Fall is here, and I am determined to make more cozy desserts. I’m starting off with this chai latte sheet cake.

Chai is a popular tea from India that typically includes spices like cardamom, nutmeg, cinnamon, cloves, and ginger.

The first time I tried a Chai latte was in Starbucks, and it’s now my favorite fall drink. So, it was only fitting that I tried making a chai-inspired cake.

This cake, paired with a cream cheese frosting, is the perfect mix of spicy and tangy. You’ll keep coming back for seconds.
RECIPE:
INGREDIENTS:
Cake:
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup brown sugar
3 eggs
2 cups all-purpose flour
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon pumpkin spice
Frosting:
1 1/4 cups powdered sugar
1/2 cup unsalted butter
3 oz. cream cheese
STEPS:
Preheat your oven to 350 degrees F, and line a 9x9-inch cake pan with parchment paper.
In the bowl of your stand mixer, cream the butter and two sugars until light and fluffy. Add the eggs and continue mixing. Slowly mix in the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and pumpkin spice.
Pour the batter into your prepared pan and bake for 35 minutes. Set aside to cool to room temperature.
With an electric mixer, beat the powdered sugar, butter, and cream cheese until light and fluffy. Spread onto cooled cake.
