Week 92: Chai Tiramisu

Tiramisu is probably one of my favorite desserts, and I order it every time my family goes to an Italian restaurant.

However, as a South Asian myself, I have always thought of how delicious a chai tiramisu would be. Today, I tried it for the first time, and trust me, it is so worth it.

I may never go back to the classic espresso tiramisu again. This chai tiramisu is packed with spices and flavor, and the tea rusk is a fun twist on the usual ladyfingers.

Tea rusk is a popular South Asian snack that’s typically served with, you guessed it, tea! So, obviously, it felt like the perfect replacement for ladyfingers.
RECIPE:
INGREDIENTS:
Chai:
1 1/2 cups milk
1 1/2 cups water
1 tablespoon granulated sugar
1 tablespoon chai masala
Cream:
2 cups heavy whipping cream
8 oz. mascarpone cheese
1/2 cup powdered sugar
10 oz. tea rusk
STEPS:
In a large pot, add the water, milk, sugar, and chai masala. Bring to a boil, then take off the heat to cool to room temperature. Pour the chai into a shallow bowl.
With an electric mixer in a large bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form. Add the mascarpone cheese and combine well.
Soak your tea rusks very quickly in the chai and immediately form a layer on the base of a 9x13-inch casserole pan. Top with half of the cream and add another layer of chai-soaked tea rusk. Finish with a final layer of the remaining cream and cool in the refrigerator for at least two hours.
