Week 89: Chocolate Chip Banana Coffee Cake

I love a good coffee cake to start off my morning on a rainy Seattle Saturday. This chocolate chip banana coffee cake was no exception.

Banana bread on its own is great, but I think the texture of a coffee cake makes the dessert even more irresistible.

The chocolate chips are optional, but I personally can’t get enough of chocolate chip banana bread, so I added them to the recipe.

Not only is the cake topped with crumble, but it’s also filled with a cinnamon sugar swirl. You will get so much flavor in just one bite!
RECIPE:
INGREDIENTS:
Batter:
1 1/4 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/4 teaspoons baking soda
3 bananas, mashed
1/2 cup butter, melted
1 egg
1/4 cup yogurt
1/2 cup mini chocolate chips
Filling:
1/2 cup brown sugar
1 teaspoon ground cinnamon
Topping:
1/2 cup butter, melted
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup brown sugar
1 teaspoon ground cinnamon
STEPS:
Preheat your oven to 350 degrees F, and grease a 9-inch cake pan with butter.
In a large bowl, mix all the banana cake ingredients together and set aside.
In a small bowl, whisk the brown sugar and cinnamon together, making sure there are no clumps.
In another bowl, make the crumble by mixing the butter, flour, granulated sugar, brown sugar, and cinnamon together.
Pour half the cake batter into your prepared pan and top with the cinnamon sugar. Add the rest of the batter and top with the crumble. Bake for 30 minutes.
