Day 337: Chocolate Breakfast Cookies

Who wouldn't want to start their morning with a homemade batch of cookies? Not to mention healthy cookies, which are just so good.

For all you chocoholics, this is the cookie for you! It's full of that rich chocolate flavor while being sweetened by only maple syrup. Plus it can be filled with whatever add-ins you want.

My favorite add-ins are strawberries and pistachios. Now that's good! These cookies are made in a flash. You just have to mix all your ingredients and bake it. This is a great recipe for a quick breakfast treat!

Make sure to flatten your breakfast cookies because they will not spread like your usual cookie.

RECIPE: INGREDIENTS:

  • 1 1/4 cup rolled oats

  • 1/3 cup cocoa powder

  • 1 egg

  • 2 tablespoons milk

  • 1/4 cup maple syrup

  • 3 tablespoons butter, melted

  • 1/3 cup add-ins, such as nuts, freeze-dried fruits, shredded coconut or chocolate chips

STEPS:

  1. Preheat your oven to 3750 degrees and line a baking sheet with parchment paper. Mix everything in a large bowl.

  2. With an ice cream scoop, drop the cookie dough onto the baking sheet. Press the cookies down with the bottom of a measuring cup. Bake for 15 minutes.
