Day 8: Chocolate Chip Ice Cream Sandwich

One of my two favorite things are cookies and ice cream so I thought why not put those two together? BEST. THING. EVER! Okay here's the story: I was making macaron's but I accidentally put the flour in a step before! I didn't want to waste the batter so I made these cookies out of them. Here they are:


Here is my accidental batter!


The batter should be sticky - just go with it!

RECIPE:


Ingredients:

3 Egg Whites (at room temperature)

¼ cup white sugar

1 cup almond flour

pinch of salt

¼ tsp cream of tartar

Ice cream - preferably mint chocolate chip

¼ cup chocolate chips (You can just go by the looks of it though)


STEPS

Preheat oven to 300F degrees.


Beat egg whites until foamy, then add salt, cream of tartar, white sugar and almond flour for 8-10 minutes.


Roll batter into balls and place on a buttered baking tray.


Bake for about 25 - 30 minutes.


Take two cookies and place some ice cream in the middle. Press down slightly, and eat!
