Day 318: Chocolate Truffles

These are healthy chocolate truffles! I love to roll them in freeze-dried strawberry powder and cocoa powder.

Another option is to use chocolate sprinkles to roll the truffles in. Crushed up nuts are also a great option!

In the ingredients, I use peanut butter in the truffles. This is optional. I really like the taste of the peanut butter paired with the chocolate.

If you're a peanut butter chocolate fan, try this option! You only have to chill these truffles for 45 minutes to an hour.

That way, the truffles will stay firm for a long time. You'll love making these easy chocolate truffles that are fudgy and so delicious!

RECIPE:


INGREDIENTS:

  • 4 oz dark chocolate, chopped

  • 1/2 cup coconut milk

  • 1/4 cup maple syrup

  • 2 1/2 tablespoons peanut butter

  • Ground freeze-dried strawberries + cocoa powder, for rolling in

STEPS:

  1. In a bowl, place the chocolate, coconut milk, and maple syrup. Microwave for 2 minutes. Mix every 30 seconds. Stir the peanut butter and chill in the fridge for 45 minutes - 1 hour.

  2. Scoop out with an ice cream scoop and roll into a ball. Roll into the strawberries and cocoa powder.
