Day 293: Cinnamon Swirl Quick Bread

This cinnamon swirl quick bread is full of flavor. The bread is delicate and fluffy and finished much faster than a normal cinnamon swirl bread made with yeast.

You can add chocolate chips or nuts if you want! It adds a great addition. I love the swirl of cinnamon in the middle of the bread. Not to mention the crispy cinnamon sugar topping of the crust. It's truly amazing!

The bread should be finished when the edges are medium-dark brown, and when a skewer is inserted in the center comes out clean.

This recipe is quick to make, and you don't need any fancy equipment. It may not seem like a lot of batter, but it's enough.

Cinnamon swirl quick bread is basically like a batch of homemade cinnamon rolls but quicker. No rising or shaping necessary!

RECIPE:


INGREDIENTS:

  • 1 3/4 cup whole wheat flour

  • 1/3 cup maple syrup or honey

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/3 cup milk

  • 1/3 cup vegetable oil

  • 1 egg

Cinnamon Sugar:

  • 1/2 cup granulated sugar

  • 1 1/2 tablespoons cinnamon

STEPS:

  1. Preheat an oven to 350 degrees F. Combine all your ingredients (of the quick bread batter) in a large bowl. The batter will be thick. Grease a 9x5" loaf pan with butter or use parchment paper. In a small bowl combine the sugar and cinnamon.

  2. Pour half of the batter into the pan and smooth the top of the bread with a spatula. Sprinkle half of the cinnamon-sugar mixture and spread evenly. Top with the remaining quick bread batter. Spread the cinnamon sugar on the top and with a knife, swirl the batter around.

  3. Bake for 45-50 minutes or until a toothpick/skewer comes out clean.
