Day 319: Coconut Fudge (Topra Pak)

Coconut lover or not, this recipe is for you! It's fabulous. This used to be my mom's favorite sweet, and now it is one of mine as well!

This is my grandmother's recipe, and she's made it very easy to make! You don't have to cook the condensed milk or anything.

Just mix everything in a large bowl, and roll the coconut mixture into balls! I don't like most coconut recipes because the flavor can get too strong.

However, the coconut in this fudge is subtle and perfectly balanced with the cardamom. Seriously, it's amazing!

Topra pak is sometimes shaped into rectangles, but I like to roll mine into balls. These are perfect for gifting. You can place them in mini cupcake liners for packaging!

RECIPE:


INGREDIENTS:

  • 1 can condensed milk

  • 2 1/4 cup shredded coconut

  • 1/4 teaspoon crushed cardamom, about 3 cardamom pods

STEPS:

  1. Mix all your ingredients in a large bowl.

  2. With a tablespoon worth of coconut fudge, roll into a small ball. Then roll into some extra shredded coconut and repeat.
